I am NOT a great cook, and yet, I have learned how to cook ADHD-friendly meals that are quick, delicious, and that even my kids will eat! Watch this video as I walk through one of our favorite recipes, step by step. It literally took me less than 5 minutes from start to finish. Here’s the recipe: Ingredients: 8 oz chicken breast (boneless, skinless) 2 cups mini potatoes, halved 2 cups brussel sprouts 2 T olive oil 1 lemon, juiced and zested 1 T rosemary, fresh, chopped sea salt and pepper to taste Instructions: Preheat oven to 400 and line a baking sheet with parchment paper. Place the chicken breast, potatoes, and brussel sprouts on the pan. In a small pan, mix together the olive oil, lemon juice, and lemon zest, rosemary, salt, and pepper. Mix well. Drizzle over chicken and potatoes and brussel sprouts. Bake for 25-30 minutes or until chicken is done.
